Tip and technique – lasagna and other casserole like dishes

Although I am giving a recipe for a lasagna, this should be used as a general guide. Make it your own. Use the tips I give in this video as a way to make your lasagna and other casserole like dishes a hit and it coming out perfectly well. The ricotta recipe can be used for lasagna, manicotti, ravioli, and anything else you would want to use ricotta for.

Instructions
Make lasanga
  1. *tip Whenever you are making lasagna or manocoti, or any casserole always place a couple scoops of sauce on the bottom of the pan before any other ingredient. This will keep it from sticking and burning on the bottom.
  2. Layer the ingredients in a 13x10 baking pan as desired. Top with cheese, parsley, basil and yeast flakes if desired. Cover with plastic wrap and foil and bake at 350 for an hour.

  1. Mash tofu with potato masher so it is consistency of cottage cheese. Add remaining ingredients and stir.

  1. (Optional) Heat pot with olive oil, add garlic, onion, pepper, and mushroom stems. Cook for a few minutes, add salt and cook a few more minutes, then add cold water and simmer for 20 minutes. Strain and cool.
  2. Heat pot and add oil, garlic, red pepper flakes, pepper, grains of paradise, cumin, and fennel. Sautee for a few minutes to let spices blossom. Add tvp and quinoa and cook another few minutes. Add vegetable stock, mushroom stock, and soy sauce and simmer until done. Let cool before assembly.
