Banana bread and or muffins

Do you have any extra bananas laying around, any of them that are too ripe to eat? Well I have a recipe for you! Today we are going to be making banana bread and or muffins! Also you might want to check my recipe for nice cream that utilises over ripe bananas. But today I will be making banana bread, so now lets go bananas!

Vegan banana bread and muffins
Instructions
Prepare buttermilk
  1. In the measuring cup add the lemon juice in the ½ cup vegan milk and set aside
Make strusel
  1. In a bowl place all the topping ingredients and cut with a pastry blender until crumbly. Place in second bowl and set aside.
Make banana bread
  1. Place the bananas in the bowl, and mash with a pastry blender or potato masher. I like my bread chunky with bananas so mash however you like yours, you do want some of it to be completely mashed to act as the binder. Next add the vanilla, salt, sugar, vegan milk mixture, and earth balance and mix until blended.
  2. Next sift in the flour, baking soda, and baking powder. Add the walnuts if you are making with nuts and Mix together until just well mixed. Do not over mix or use an electric mixer. We want as little gluten to form as possible.
  3. Next spray the loaf pan or muffin tins and place mixture in the pan or tins. Sprinkle with the streusel topping, you may have some left over. Bake for an hour for the bread or 30 minutes for the muffins or until a toothpick comes out clean. Cool for 10 minutes, remove from pan and then cool completely.
  4. You can serve warm with a pat of earth balance on top.
