Place oatmeal in mixing bowl then put sugar, milk, earth balance, cocoa and salt in a large saucepan
Bring saucepan to boil and boil one minute while stirring. Do not cook longer than a minute otherwise the cookies will turn dry and crumbly.
Remove saucepan from heat and add peanut butter and vanilla, stir until mostly incorporated. Add to oatmeal and mix.
Drop by the heaping tablespoonful on waxed or parchment paper and let cool. Should make 28 cookies. Alternately you can put in a buttered 8x8 pan and make into squares. This recipe can be easily doubled.
