Hello everyone, first of all I would like to apologize for my extended awful appearance and voice. I am suffering from Bells Palsy and so I am going to be a bit of a challenge. Also somehow the audio got recorded from my camera instead of my external microphone so the audio in the first parts of the video is horrible. Just a series of challenges this time.

Today I am recreating and reimagining one of my favorite dishes I used to love to eat at one of the now long gone restaurants I worked at. Wild mushroom strudel with a madeira wine sauce. Today I am going to be making eggplant caponata. This is something that I have been wanting to make for a long time. This reminds me of the years I worked in Italian restaurants, and will be a favorite dip, appetiser, or snack. It is really easy to make as well!

Today I am going to make something that I have been craving for a long time. I am going to make vegan biscuits and sausage gravy from scratch. This is one of the things my grandma used to make, so it brings back memories of her.
This recipe was requested by Instagram user microkellz , she wanted me to make some Thai Yellow Curry from scratch, so I did some research and tweaking and this is what I came up with. *Note, I originally intended to make this video in Spain, but a lot of the filming got lost or didn't get recorded for some reason. Instagram user madamyauch made this suggestion, and of course I had to do it. Vegan Eggplant Parmesan is one of my favorite Italian dishes, so of course I had to make it! Thank you for your suggestion! The video is 30 minutes long. I try to keep my videos as short as possible, but since there are several steps to make this dish it is longer than usual. I am making my own sauce and breading my own eggplant, so this video is like watching two in one. You can use store-bought sauce if you would like, but making fresh tomato sauce is easy, let me show you how!
Although I am giving a recipe for a lasagna, this should be used as a general guide. Make it your own. Use the tips I give in this video as a way to make your lasagna and other casserole like dishes a hit and it coming out perfectly well. The ricotta recipe can be used for lasagna, manicotti, ravioli, and anything else you would want to use ricotta for.
