Hello! Today I will be making my vegan version of Orange Chicken, Orange Seitan! 🙂

Ingredients
Seitan
- 2 cups vital wheat gluten
- 1/2 cup nutritional yeast flakes
- 2 teaspoons garlic powder
- 5 cups vegetable stock divided in 1 cup and 4 cups
- 1/2 red onion chopped
- 1 garlic clove minced
- 2 teaspoons Chinese 5 spice powder
- 2 tablespoons orange juice concentrate thawed
- 1 teaspoon szechuan peppercorns grinded
- 1/4 teaspoon red pepper flakes
- 1 tablespoon soy sauce
Sauce
- 1/2 cup orange juice concentrate thawed
- 2 tablespoons sugar
- 1/2 cup soy sauce
- 1 tablespoon toasted sesame seed oil
- 1 1 inch fresh ginger peeled and finely grated
- 2 cloves garlic minced
- dried chilis to taste
- 1 tablespoon chili sauce or to taste
- 1 tablespoon szechuan peppercorns ground
- 1 dried orange peel chopped

- 1/2 cup corn starch
- 1/2 cup flour whole wheat or white
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon grains of paradise ground
- 1/2 teaspoon szechuan peppercorns ground
- 1/2 teaspoon red pepper flakes
- 1 1 inch fresh ginger finely shredded

- 4 cups rice cooked measurement
- 2 cups Asian veggies fresh or frozen

Instructions
Seitan
- In a bowl add the vital wheat gluten, nutritional yeast, garlic powder, and spices. Mix well.
- Add 1 cup vegetable stock, orange juice concentrate, and soy sauce and mix well. When the dough forms a ball kneed for 2/-3 minutes
- Put dough on cutting board and divide and cut into small bite sized pieces. The seitan will double in size when cooked.
- Put the remainder cold vegetable broth and onion in a pot and add the seitan. Bring to a boil. When boiling turn down heat to med-low medium so liquid is still simmering and cook for 45 minutes.
- After it is cooked remove seitan from liquid and let cool.

- Sift together the corn starch, flour, baking powder, baking soda, and salt.
- Add the spices and mix. Add the water and mix more so you have a thick batter. Set aside and let rest.
Fry seitan
- Make sure the seitan is in bite sized chunks, if not then cut them.
- Heat up a pan with oil to 350-380 degrees Fahrenheit or use a frier and heat the oil.
- When oil is hot dip some of the seitan in the batter and gently place in oil piece by piece. until pan or frier is full.
- Remove when batter is a golden brown and place on a couple of layers of paper towels to drain the excess oil.
- Repeat until all the seitan is fried.
Cook the orange seitan
- Place the fried seitan, vegetables, and ingredients for the orange sauce close to your stove, this will cook fast.
- Heat your wok to high. When your wok is hot and you start to see smoke add the sesame seed oil and let it get hot
- When the oil is hot add the ginger, garlic, chili flakes, szechuan peppercorns, and orange peel, and stir to keep from burning. When you smell the spices add the chili sauce and cook for another half minute.
- Add the orange juice concentrate, sugar, and soy sauce and let come to a boil.
- Add the fried seitan and veggies and stir so everything is coated. Cook for a couple minutes or until the veggies are cooked.
- Serve on top of a bed of rice. You can also use quinoa, amaranth, other grains or a combination of your choosing.
