Today I am going to make a simple refreshing cold soup that is perfect for those hot summer days. Cold cucumber and avocado soup with cilantro and lime.

Ingredients
- 1 clove garlic minced
- 1/2 teaspoon sea salt
- 2 large cucumbers peeled, seeded, and rough chopped
- 2 cups vegetable stock
- 1 can unsweetened coconut milk 14 ounce
- 2 tablespoons lime juice fresh squeezed
- 1 tablespoon cilantro minced
- 1 avocado
- cucumber sliced for garnish
- fresh cilantro leaves for garnish

Instructions
- Place the garlic and sea salt in blender or food processor and pulse until pasty.
- Add cucumbers and pulse until liquid.
- Add remainder and blend until liquid. Cool, then serve.
